I went to Switzerland to find inspiration in various delicious dishes. It turns out that going away from İstanbul could instantly alter one's whole energy and chemistry.
I went down to Basel in Switzerland. After the passport control, I saw that there are two exits in the same airport. One exit leads to Switzerland and the other one leads to France.  Guess which exit I chose! Strangely, I found myself near the France exit. Fortunately, I realized the situation and went to the Switzerland exit. It sounds nice to be in three countries in one day when you think about it. 
I think it is wonderful that two countries are so interconnected. My friend who lives in Basel tells that sometimes they go to France for shopping and other times they go to Germany for the same purpose. Think about it: What a great chance it is to buy the best of the cheese from France and the best of the sausages from Germany. Basel is a very small and quiet city. One can notice that all the countries around influence the city in terms of gastronomy. 
There is a concept so-called "Market Halle". I would really love to have it in our country. Imagine a closed marketplace. It is possible to find all sorts of foods and beverages here. This concept is present both in Basel and in Colmar. There is a big area and there are tables in the middle of it. You can buy whatever product you want and eat them at those tables. You can even find great products for home such as wine, cheese and baguette side by side. 
We found it hard to find a place to eat in Colmar because we missed the lunchtime. In Market Halle, finding a great solution, we prepared ourselves a menu with glasses of wine, great France cheese, and baguette. We went to eat them in a park with a beautiful view. The food was delicious. Sometimes these kinds of dishes please a person more than the best restaurant's meal. It is also an opportunity to get to know the local people's way of eating.
I saw that the country is very advanced in terms of bread and bakery. There was a dessert named "galette" in every bakery's showcase. A paper crown was placed on it. They call it "Galette du Roi et Reine" (the galette of the king or the queen). The person who finds the almond hidden in the dessert wears the crown and becomes the new king or the queen. What a lovely bit of information! Don't be surprised if you see this dessert and the king's crown on Sanayi313 buffets this year. 
I think my short journey to France and Switzerland gave me good inspiration. We changed the menu again. Of course, you can see some French influences.

Interior Architect Ömer Öztop, who is a part of Sanayi 313 Architects family, has shared his Stockholm adventure with us. He was listening to “Passionfruit” while leaving the city behind. I did the same when reading his article. 

After my decision to visit Sweden, my friends and family kept making jokes about the cold and darkness over there. No matter what, I found myself on the streets of Stockholm on the 7th of December at 14:30. When it gets dark at 15:10, I was walking around the streets with raindrops on my head, listening to my favorite music. 
With its design stores, wide and magnificent avenues and sweet cold, Sweden gives me the signals of being a great experience immediately. I explore the city by walking for approximately 25 kilometers.  The second day on the other hand is all about subway stations and their art works just like art galleries. 
First, I walk around Arsta marina. Then, on one of those subway stations, I give a break on the most hipster one “Fikabaren Södermalm” with its great cafes, design stores and restaurants. For dinner, I go to the best hamburger place in town - Flipping Burger and wait at the line. I have my breakfast at Fabrique Bakery and begin to discover the city’s architectural beauties at Stockholm Library. The building, with its Nordic Classism style, captures the visitor and makes him/her experience the space in a completely different dimension. Though the sky gets dark pretty early, I say goodbye to this great city hoping to visit in summer to see the White Nights, listening to Drake’s cover “Yaeji-Passionfruit

I stepped into Sanayi 313 and saw those big Three Monkeys sculpture by Mahmut Aydın. As the artists explains, the sculpture is a symbol of three monkeys; one covering his ears, who hears no evil; one covering his eyes; who sees no evil and one covering his mouth, who speaks no evil just like the system wants us to do… Then it comes to my mind, Enis recently brought up a new little ‘three monkeys’ object, which is now on one of the shelves in the store. There are no coincidences just like all those no coincidences I witnessed lately. My perception level is broadening. 
I create time to listen to myself every day. I follow what I hear, see and my unconsciousness very closely. This gives way to good things in my life. 
1989-Diyarbakır born artist Mahmut Aydın’s sculpture made me realize the positive comeback of my meditations. The artist shows people’s revolution through time by environmental and social, natural and artificial conditions that affect humans’ growth and freedom. I realized my own revolution, thanks to him.

When Serena told me that her inspiration for Stelle Glimmer booties was David Bowie I got really excited. The life of David Bowie was one of the very first articles I wrote for a magazine. After, I got so interested in his life and character that I even have a black &white photography of him hanging on my living room’s wall now. 
I remember how I began my article; with a quote from David Bowie:
“As an adolescent, I was painfully shy, withdrawn. I didn’t really have the nerve to sing my own songs on stage, and nobody else was doing them. I decided to do them in disguise so that I didn’t have to actually go through the humiliation of going on stage and being myself.”

Often inspired by music, Serena created the Stelle Glimmer booties, using the beautiful glitter texture to build an avant-garde boot with a tiny round heel; a style that gives nod to the late ‘David Bowie’.

I realized something during my London vacation last week. I take pleasure out of visiting the familiar restaurants, shops and museums I like just as discovering new tastes, finds and visuals. 
During my 3-days visit, I generally did the activities I am used to do in London. I walked around Notting Hill streets; visited my favorite bookshop Lutyens & Rubinstein, had lunch in Assaggi, had brunch in 202, watched the artistic movements of Yashin Sushi’s chef while eating delicious sushi with no soy sauce and stopped by Liberty.
My first-time activities were going around the Affordable Art Fair. The concept of “affordable” varies from person to person of course. Seeing the artworks created by young artists was very pleasurable. I had lunch at Ivy Chelsea Garden. The food was not that bad but I don’t think I will go there one more time. I had tasty cocktails while listening to live Jazz in Rosewood Hotel. This spot is definitely going to be included in my London routines from now on. 
If you’d ask why my London photos are black & white, let’s say it’s a surprise. Who knows, maybe black & white photography is going to be a new routine in our lives. Who doesn’t love routines?

Sanayi 313 Bebek has a visitor these days; “Roberto The Deranged”. 
Artist Murat Işık uses characters like Tintin and Dupond to symbolize humans or humankind and satirize sociological and politic issues. 
Artist’s works in the serial “Otto-Money” symbolize the uprising interest and passion of Turkish people towards Ottoman Empire in a critical and fun way. 
Murat Işık was born in Istanbul, 1967. At the age of eight, Işık started to study painting.
He graduated from graphic design department of Marmara University Faculty of Fine Arts.
His first artworks were exhibited at the 4th Biennial of Istanbul.
​After a long pause due to his career as a high-grade advertising creative he fully returned to the art scene in 2017. Murat Işık has written a book called "Assorted Luxury Biscuits", which was published in 2016 by Doğan Books.

I was in Amsterdam last weekend. Such a serene city. 
I was first impressed by the hotel we stayed in. Hotel Pulitzer Amsterdam welcomed us with a piano hanging from the ceiling and a small flower shop corner. The old portraits and choice of artworks inside the hotel were beautiful. We had both breakfast and lunch at Janzs restaurant of the hotel, the food was incredible. 
The streets nearby the canals and the little shops on them gave me inspiration. One of them was “Guild of Holland”. Andrea Molti was creating leather accessories with his hand and the ones on show were very elegant. Amsterdam is a city of art. I saw many galleries on those streets. One of them impressed me with the work “Passage” by Mohau Modisakeng. “Passage” is a body of work consisting of performance, photography and film.  It focuses on slavery dismemberment of African identity and its enduring erasure of personal histories. 
We went to The Rolling Stones’ concert on Saturday night. Seeing Mick Jagger, Keith Richards and Ronnie Wood on stage was like going back in the history. 
My last stop before leaving on Sunday was Athenaeum Nieuwscentrum. It is a world of magazines and books. I got lost in the store and found many good ideas for Sanayi 313’s upcoming site from the magazines I could carry with me.

Istanbul is very lively these days. Contemporary Istanbul Art Fair just took place, Istanbul Biennale is going on with its very strong theme “a good neighbour”, Ai Wei Wei’s exhibition is in Sakıp Sabancı Museum, which has a new restaurant inside by MSA; the leading culinary school of Istanbul and Wallpaper Istanbul City Guide is recently published. Sanayi 313 is shining at me on those pages. 
With 313’s seasonal changing menu, the Fall Shoes & Bags collection, interior architecture developments going on inside; I felt the need to upgrade our blog; turning it into a livelier form. We will be sharing many different subjects, which will be written by special writers! The subjects and names stay as a surprise for now!

Sculptor Günnur Özsoy’s atelier is in the area of Oto Sanayi, nearby Sanayi 313. Apart from being neighbours, we share the same vision. As of last week, the artist’s binary sculptures are being exhibited at Sanayi 313. These abstract forms have created a new sereneness in 313.

This binary work you created at the end of the 90’s shine out with their colour. What does burgundy mean to you?
I made a series of sculptures using the colour burgundy after the 1999 earthquake. These are outcomes of despair, sadness and resentment. My binary work exhibited in Sanayi 313 right now are a follow-up of the series. I like the term burgundy since it reflects the colour of red wine. I like to give meanings to the colours I use; such as livid and eggplant purple. In this way, my understanding of art is more than just colours reflecting other notions. Colour of burgundy in the poem Odyssey is a great example. 

You first exhibited these sculptures in a horizontal form. Today they are being exhibited vertically. What made them transform?
My biggest claim as an artist is creating abstract sculptures; organic forms without any aspects. Anyone can exhibit them in any way they like. To make the audience feel this freedom, I have exhibited my works in many different ways; sometimes horizontal or vertical, sometimes on a base or hanged from the ceiling.  My aim is to indicate that my sculptures can be exhibited and used in every way.

313, since it is nearby your atelier, has been a place you come frequently since our first days. How does it feel to exhibit your works at this place?
Through my sculpture practice, the relation I have with spaces becomes deeper. Sanayi 313 is always regenerating and in action with the changing objects inside the place. This makes it alive. An artwork’s only belonging should not be museums and art galleries. A way to make them alive is to present them in spaces like Sanayi 313.

It might be the most ideal vacation city. With its weather, sea, landscape, food and museum, Nice is an uplifting location. Our chef Müge is touched by the city in a completely different way once more after many years. read more
It might be the most ideal vacation city. With its weather, sea, landscape, food and museums, Nice is an uplifting location. Our chef Müge is touched by the city in a completely different way once more after many years.   

It was very exciting for me to visit Nice after 15 years.
While I was in secondary school, I stayed in Antibes in south of France for the summer to improve my French. At that time, my sense of eating was not clear like today. As time passes, people’s interests and curiosities change.
During my vacation, I ate delicious food, I saw many district bazaars, visited the museums of my interest. I have some suggestions. If you visit Antibes, a must visit is Picasso’s museum. It is the most luminous exhibition space with a great landscape I have ever seen. The beauty of the paintings come together with the setting and take you to another world. I also suggest visiting Musée Matisse and Musée Marc Chagall. 
Since my healthy living walks are going very well, I continued with my morning routines during vacation, too. They were setting up the Cours Saleya bazaar during my walks. Fresh blackberries, raspberries and zucchini blossoms from the garden became an incredible visual feast for me. I wanted to put those vegetables and fruits in my luggage and bring them here. I came up with a better idea. I bought the seeds of the vegetables and fruits and brought them here and gave them to Mr. Güven so he can plant them. Different types of tomatoes’ and zucchinis’ seeds were my favourite. The most exciting seeds were freckles lettuce and endive. I hope the seeds give flowers and I can manage to cook delicious food.
We ate good food. Coquillages Brun restaurant located in Cannes was really different. It has been open since the year 1953. I haven’t eaten such fresh and delicious seafood for a long time. Oysters, limpets and crabs were really tasty. We had clam on top crab risotto, which was the speciality of the day. It was just perfect. 
What I liked the most was people stopping by mini cocktail bars after work.  I would love it if the same culture would exist here in Turkey. I think it is something that makes people happy. 
My Nice vacation was really pleasurable. I came back with new ideas of dishes and experience. I suggest you follow our menu…

The melancholy of Autumn is often replaced by the idea of new things and beginnings.
“Back to school”, “fashion overdose”, “fall vegetables” or “lying in front of the TV with pajamas”. These ideas can really make us feel good.
While I was swimming in the blue sea of Symi yesterday, what excited me the most among the things to do at home today was viewing Sanayi 313 pre-fall collection. I got excited for winter days. 
Serena created the collection with the power she got from Voltaire’s quote; “Man is free at the moment he wishes to be.” Proust, Louis XIV, Botticelli and Marie Antoinette are accompanying Voltaire while giving their names to new season’s shoes and bags. I felt like I was in a wonderland inside the new collection. My favorites are Antoinette’s; the most fairy ones among them all.

By the Instagram stories Müge shared, I recently realized that she started mornings walks. Once you begin to live healthy in one course, the rest comes easily. Now, she created a healthy menu for Sanayi 313 Bebek. She is sharing the details with us:

I was working on the healthy menu for a long time. I think all the innovations are created as a result of needs. 
These days, I begin to reason those who care about what they eat. The awareness in nutrition is developing, the trends are changing. 
Refined sugar, simple carbohydrates and foods containing preservatives are very rarely consumed. Instead of these, foods that are rich in protein and fibre, nutritious; low glycaemic index foods are in great demand. Flour leaves its place to almond flour, sugar on the other hand is replaced by dried fruits. As an alternative to dairy products (allergies are growing), almond milk and soy milk are being consumed. 
I created some new alternatives to our menu for those who care about their health and pay attention to what they eat. 

•    Scrambled egg white with turmeric, avocado on pumpernickel bread
•    Whole-wheat roll with cheese, pink tomatoes and basil, hard-boiled egg
•    Detox: Cucumber, parsley, green apple and ginger juice
•    Cooked oatmeal with milk, agave syrup, cinnamon, banana
•    Chia pudding with fresh fruits, coconut milk and lime peel

When I saw Kemal Tufan’s works many years ago, I was really impressed. Inspired by the nature, he creates ironic sculptures. I have always liked huge and tiny objects. In our small corner Sanayi 313 Bebek, Kemal Tufan’s big sculptures are exhibited this month. They matched each other very well. 
Kemal Tufan was born in Silivri in 1962. He has a degree in the sculpture department in fine arts faculty of Mimar Sinan University. He has joined many personal and group exhibitions both in and out of Turkey. His exterior sculptures are exhibited in 34 different countries’ various cities.

Music editor Figen Hazbay told us about the boutique electronic festival she went. The festival, which took place in a farmhouse and welcomed only 2000 people was very exciting, she said. She made me curious!
Festival Era is a 2000 people Electronic Music Festival located in Llagostera Town – within an hour’s drive from Barcelona. Taking place in a farmhouse’s property, this festival took me away from the city and left me all alone with nature and music. 
The festival began in day time and went until the early hours of the morning. Mostly Catalan groups were on the stage. I had the chance to know new musicians. The most satisfying musician for me was my new discovery Awir Leon. Born in France, Amsterdam based musician is also a producer and a performer. He was taking place in a festival in Spain for the first time. His excitement was perfectly reflected on the stage. His voice was still on my mind after I left the festival. 
I should also talk about my favorite groups. Two Catalan groups, which I had the chance to listen to in Barcelona; Playback Maracas and Animic. They both performed very well on the stage. 
For some reason, little and local festivals excite me more. Festival Era was definitely one of them.

I start my day at Marenga Milk Bar. As I am drinking my iced coffee, I am eating scrambled eggs, which I know I will never forget the taste of. A cute girl is sitting across me, don’t worry about who she is.  On the hills of Mykonos, this primitive location is to explore for. Marenga Milk Bar makes you feel good with its bamboo ceilings, concrete floor and natural warm colours. Despite the slow service, I leave the place happy with its owner Angela’s smile. 
I don’t like to drive, especially in an island! I found something like Uber and thought of how things spread so quickly for couple of minutes. 
Then, I visit Nikos’ store and I can’t drink anything other than water. It’s very hot and becomes even hotter among the diamonds. 
I know it’s going to be a great vacation. Alemagou, Principote/Panormas and Sundays’ favorite Scorpios smile at me from my list. I am staying on a boat but this time this sailboat means only a heavy sea. Mykonos is not suitable for boating. But my family and my eight-months-old pineapple, my niece soothe the speed of the wind and white surfs of the sea. We get used to each other with my pineapple on this vacation. She is afraid of my beard but I can’t trim.
I love getting lost in the streets of this island, which never misses to make you smell the lamp. While looking for Astra, I come across with Interni. There is a good party but I seem to know the faces. I want to go on with being a tourist. 
I forget about my list and clear my head. I find myself in a fish restaurant called Koursaros inspired from Japanese cuisine. I like the place even more when I see Sake on the menu. Then, I go to Astra located in the town with my friend from university. There is still no plans. It went like that till the end of the trip.
As the sun raised in my cabin on Monday morning, I felt like I was in the office. Phone calls, e-mails and everything that we are enslaved by everyday routines begin to smile at me. 
I will go back in the soonest time…

I couldn’t wait for sharing Müge’s surprise post about tomatoes since tomatoes are also my favourites for summer. I can’t live without them!

I want to share what I feel about tomatoes, which are my kitchen’s favourite ingredients these days. 
Do you know where you can eat the best tomatoes? At marketplaces! When you find juicy, scented pink ones, it becomes even more pleasurable to eat them…
Another secret I want to share: if you see a tomato field, don’t forget to smell the leaves of tomato seeds and green stalks. One can lose herself. 
When I don’t want to eat much during summer days, my life saver is feta cheese and tomatoes. If there is mozzarella and tomatoes from the field, it is the best joy ever. When I put them on the plates, I add a little bit of olive oil, which I got from Altınoluk. A glass of red wine along the duo would make me the happiest. 
Tomato means summer and taste to me. Tomatoes we eat near the peppers we get from our garden or pasta with tomatoes after going into sea are great dishes of summer.
As the sun gets hotter, 313’s kitchen is full of tomato crates. Since I don’t use tomatoes during winter, I prefer to add them to every meal in the summer months. To the eggs, fish and salads…

Saturday Brunch at Sanayi 313 during summer is a great choice for those who stay in Istanbul for the weekend. I prefer to go there when I stay here in the city. The different kinds of eggs such as with avocado, mushroom or local cheese, granola with yogurt and the delicious quiches are great choices for late mornings. Chill-out music at the background and searching for good buys complete my brunch, making our Saturdays complete.

I went on a date with myself. With an 8-months-old baby and a dog at home, it is hard to find time to be all alone. I found the solution by going on dates by myself.

This time it was with my books to Sanayi 313 Bebek. A fresh juice, eggs and books in a cozy place is the perfect date for summer. I shut down my phone, ordered my breakfast and got lost in my book. I refreshed my mind in an hour and came back home to my baby and dog.

I went to Tarkan's concert yesterday night. Icecream, popocorn and and nostalgic beverages took me to my childhood days. Then the concert began. It was first Tarkan's new songs, then came the old ones consecutively. Tarkan's energy, his dance moves and the enthusiasm of the crowd created a perfect night for me. I had my Fiocco Box Sanayi 313 bag with me... It was a good mood.

When I go to vacations in summer, I don’t need much to take with me. My summer hat, Sanayi 313 espadrilles and a Scrabble game is more than enough. During holidays, we play with the modern version but at home I have an antique one from Sanayi 313. It’s a completely different experience to play with the vintage Scrabble. It also uplifts our living room’s decoration.  Definitely recommended!

Nataly and Murad Osmann visited Sanayi 313. They first took a tour around the store then we chatted. They have very positive energy. Talking to them during dessert and tea time was great. I asked if they were thinking of having kids other than the classical questions. Murad told me that their family were making pressure about the issue and they might have a child soon. We said good-bye with a dinner promise in Moscow.

I can see why she is orange. There are some people who get lost in their dream world. Sometimes for months and years… But the day comes when this ‘being lost’ is turned into reality. It is really something big to be able to come back to life after many dreams. Zeynep Solakoğlu has made an inspirational work from an eight-year period. I found something for myself on every page of her book “Orange Girl”, which is on my desk right now. The strength of love, the importance of the childish part of me, realization of my ability to find light through darkness…

I was impressed by this quote in the beginning of Zeynep’s story.

“Your mind makes out the orange by seeing it, hearing it, touching it, smelling it, tasting it and thinking about it. But without this mind –you call it- the orange would not be heard or smelled or tasted or even mentally noticed. 
It’s actually the orange depending on your mind to exist. Don’t you see that? 
By itself it’s a no-thing, it’s really mental, it’s seen only of your mind. It’s empty & awake.” Jack Kerouac

Zeynep wrote stories and drew since her childhood. Her drawings are very detailed and breath taking. The story told in between the black&white drawings of this book is about the newly university graduate Zeynep who doesn’t know what to do, confused and in the air; the Orange Girl.

As the weather gets warmer, our eating habits begin to vary. Especially in hot weather, we prefer to eat light food rather than oily and heavier dishes. 
One of my favourite dish for summer is green zucchini with almonds and yogurt, which is highly preferred in Sanayi 313 Bebek and Oto Sanayi buffet. 
It is easy to find green zucchini this season. If you go to district bazaars, you won’t have any problems finding them. 
This time, I will be sharing a very practical and matching recipe. 

Ingredients:

1 kg. green zucchini
300 gr. strained yogurt
100 gr. almond powder
Salt-pepper
Olive oil

We cut the zucchinis in the middle and take of the inner part with a spoon. Then we add a little amount of olive oil, salt and pepper and then cook them for 15 minutes in a preheated to 200 degrees’ oven. 
After taking the zucchinis away to leave them for cooling, we begin to prepare the mixture. We mix the yogurt and almond powder in a blender. It is important that the mixture is not fluid. Because if it is fluid, it can flow from the zucchinis. If needed, you can add more almonds. You can add salt and pepper in the amount you desire. 
We put the mixture inside the cooled zucchinis. It is important that the zucchinis are cold because the yogurt might ferment otherwise.  
I garnish the zucchinis with roasted almonds and spices. Fresh herbs can be another way to garnish them.

Enis has been bringing up this subject since he came back from London to Istanbul; Mathieu Miljavac’s birds. I knew that they meant a lot to him but could have never guessed that it could be this meaningful. Those birds that were packaged since his turn back came to life this week. And the same week I realized what Mathieu’s birds really represent in Enis’ life. 

Enis is telling:

What we would become after death has always been an issue of concern for me. I questioned what we would leave behind while our bodies dissolve. 
When I went to Paris for vacation, I saw the “Taxidermy” installation by Mathieu Miljavac at "Paris at L’Eclaireur and at the Galerie Da-End” and realized that physical bodies can also be everlasting.  I got interested in the art of “Taxidermy” and the concept of past teasing the future impressed me a lot. 
In 2014, I saw Mathieu’s artworks one more time at Arts Décoratifs Paris. I felt that the past Mathieu gave life to should be present in my future. Mathieu Miljavac is the first “Taxidermy” artist who has exhibited in Arts Décoratifs.
This encounter, which just took time at the time of my coming back to Turkey awakened a feeling of migration in me. I thought of the things that I brought with myself to Turkey and left behind after 10 years of living abroad. It was the perfect time for owning such an artwork if I was ever going to…

1-His house in London Notting Hill. – We were there a few weeks ago. There is this comfort and ease its architecture gives you. Is it weird if I say I felt like I was in a warm and cozy home inside a museum?
2-Louis Vuitton suitcase – They are more beautiful as they get older. I have a vintage one from my mother, maybe it the most beautiful bag in my wardrobe.

 Actually, this title is very meaningful for me.
-We used to dream of having meetings here. 313 was in construction those days.
-We talked about the possibilities of having our meetings along with delicious lunches. Müge was organizing her team and creating the menu back then.
-Dreaming of the restaurant being busy, thinking of who would come to have lunch here… Would the employees from the plazas around come?
-And the subjects of our meetings. I can say they changed dimension.
Last Monday, we were going to have a meeting with Enis and Merve Sayar (new web designer we are working with) to change the look of our newsletter. I stepped inside and came face to face with our warm friend Seçkin Pirim, who has been with us since the first days. I was heading to the open buffet when I saw Athena Gökhan in the next table chatting with two friends. Three girls were having lunch inside. And plaza employees were on another side as well. 
And there was no food left in the open buffet. Not important at all. I was all smiles. I ordered my main course with a glass of wine. Then I had my favorite dessert Fudge Cake with Coconut. This time they added raspberry, too. It was delicious. Meeting was very productive, too.
When I look back, I realize how much we improved. We should never stop. Now I am thinking of a print 313 newspaper…

David Hockney and those cheering swimming pools… I never could have guessed seeing his work would have impressed me this much. Maybe because it was my daughter’s first visit to an exhibition, maybe I was hungry for inspiration or maybe it was the simplicity and the sophistication Hockney’s works unfold. 
What excited me about his works is seeing the real life of real people in such an advanced art form. I saw his parents, his friends, his partner, the artist himself in his art. I know how he felt about Los Angeles and how he found the city ‘sexy’. Now I am a piece of his world. 
What gave me inspiration the most during my visit was witnessing how he kept pace with the developing art forms. David Hockney was born in 1937. The exhibition in Tate Britain offers the opportunity to see his classical early paintings alongside works in different mediums. He used photography as one of his media in 1980’s. He created artworks from little Polaroids showing different viewpoints as well as time and movement. In 2010, Hockney began making multi-screen video works by fixing a number of cameras to the outside of a vehicle. 
Even though he used different mediums throughout the years, there is a theme making his work whole. That feeling of integrity, the expression of real life and the cheering vibe… I found his work so inspiring. A must visit exhibition.

“Re Della Foresta” means the ‘King of the Forest’. Lately my favorite piece from Enis’ designs is also one of his favorites. Its presence in Sanayi 313 is felt strongly among huge furniture with the old casting fountainheads carried on top of its bronze legs. The name comes from its strength. With “Re Della Foresta’s” two different levels of surface and because of its weight, the wheels create a functional coffee table.

It is enjoying to read what Müge feels during her working routine in Bebek through her sincere writing about Sanayi 313 Bebek. 
After a long break, it feels great to find time to write again. 
Sanayi 313 Bebek is open and it’s a big step for all of us. 
We open the doors at 7.00 in the mornings with our healthy menu with eggs and continue to serve food from our buffet until 9.30 in the evenings. 
It is pleasurable to be present in Bebek. 
We come to the shop around 6.30 in the mornings with Sinem and begin to get ready for our patisserie buffet. Then, from our growing kitchen team Ece and Merve join us and the preparations for the salad buffet take a start. 
I added new tastes to my menu for Sanayi 313 Bebek. I couldn’t give up the meatballs and kokoreç (grilled sheep’s intestines) because of strong demand. 
What I like and dream about the most was a little shop filled with the smell of baked pastry. My dream is real now. You can feel this smell once you enter our corner in Bebek.
It is also very enjoyable to meet with new people and be a part of their daily routines. I get so much pleasure out of chatting with people who stop by and have a coffee with us before going to work. Couples who come after their weekend walks, ladies who care about their health, little children crying to eat the chocolate cookie… Sanayi 313 Bebek has touched us all. Especially once we get positive feedback from people, then we say “happily we did it”. Happily we lost our sleep over excitement with Enis, happily we made new plans…

I couldn’t help but to read the books of travellers and watch their experience videos lately. Doğu Ekspresi (East Express) was one of those. Since it is in the east part of Turkey and has an uncomfortable image (maybe), it isn’t a common choice for a trip. But with the videos we watched, we wanted to go there so badly and then we took out. 
East Express is a railroad servicing between Ankara and Kars. The route is: Ankara > Kırıkkale > Kayseri > Sivas > Erzincan > Erzurum > Kars.
We took our place on “Couchette Compartment”. 4-person armchairs turn into beds. They give you clean sheets and pillow covers. Everything is comfortable and clean. 
Train leaves the station at 18.00 and arrives to Erzincan around 6.30. You wake up to a view of deep blue river among the mountains. Not to miss anything, we watch outside without blinking an eye. As we approach to Erzurum, the view turns into an endless emptiness. Just then we hear Redd’s lyrics in the compartment. “What would a person do in this emptiness, gets bored and watch the moon.” You don’t get bored not one second even though the trip longs 25 hours. 
We welcome the sunset as well. The changing colours of the sky reflect on the snow. Though we have a sadness because the train trip is over, arriving to Kars makes us happy. 
The first stop of the day after is Çıldır Lake. There is a fish restaurant over there. A man from Kars working in the restaurant welcomes us, telling the story of the lake. It freezes on December and stays like this until April. The thickness of the ice is approximately 50 cm. You go on top of the lake with horses and sleds. White and emptiness all out… While looking at it, your brain is freshened, you get calm. We say hi to white foxes on the way. 
Our next stop is Ani Ruins on the Armenian border.  We end our route after an 8 km. walk by seeing all of the ruins. Ani Antique City is located on one of the most important trade routes of the world The Silk Road. It was built by Armenians on the 10th century. There are impressive churches and ruins of mosques in the city. Arpaçay River is like a natural border between Armenia and Turkey. It is a very big impressive slit. 
Then we go back to the airport. Emptiness is filled with concrete now.

The first thing I do in the mornings is having an espresso. 
I came to Sanayi 313 today because I wanted to see the works of Devran Mursaloğlu hanging on the wall. 
I had “kokoreç” (grilled sheep’s intestines) at Sanayi 313. 
Among the desserts I had SKIP .
The first things that caught my eyes while going around the store were the books about gardening. 
Sanayi 313 Atelier mules stayed on my mind the most. 
After leaving Sanayi 313, I went around artists’ ateliers. There is no going back from Maslak without passing by Kemal Tufan, Günnur Özsoy and Seda Gazioğlu!
Before going to bed I always drink water.

Enis took me to the first days of Sanayi 313 with the Mood Board he prepared. The woman’s face taking place in the middle of the Mood Board was drawn by Seda Gazioğlu just before 313 was opened. The wheel around the image is symbolizing the Oto Sanayi area whereas the strong woman is a metaphor for the changing face of Sanayi. 
Today as a team, we are carrying the same excitement we had those days. That’s why I am proud of us all. 
The other objects of the Mood Board are pieces from Sanayi 313 Cruise Collection, our production chocolates, old timers of Sanayi 313 James Plumb bench and mirror, Enis’ design General Gordon poufs and Cathy Dalwood’s “Turkish Girl” sculpture which is a special edition. There are also the stairs of the store and 313’s irreplaceable the multi-purpose stools. 
Actually all those pieces remind me of different memories. The first picture I shared on Instagram was 313’s stairs. Chocolate was the first thing I brought home from 313. The multi-purpose stools (you can put your coat and bag inside it) were the first to attract my attention from the store.

Going to the future, at the end of the year and stating what would make you happy in terms of career, family and self… 
I just wrote mine down:
CAREER
1) Writing Sanayi 313 Blog in the best way possible.
2) Publishing the book I wrote during my pregnancy.
3) Reading as many books as possible.
FAMILY
1) Spending good time with my family.
2) Raising my baby in the best possible way.
3) Providing a spiritual development for my family.
SELF
1) Healthy body with sports and balanced diet.
2) Spiritual development.
3) Educational development.

Now I am going to manage my time according to the priorities I have.

Sanayi 313 Bebek is open now. We are excited for our new spot in many ways. It’s a brand new location, it's open seven days a week, until 9.30 p.m. We are serving dinner, too. There is a one big table inside; we are sharing the table with strangers and socializing with them. We are sitting in front of Sanayi 313 Bebek, watching the streets of the most posh neighborhood of Istanbul. 
Another reason of our excitement is our collaboration with PG Art Gallery. PG is exhibiting on one of the walls of Sanayi 313 Bebek. Maura Sullivan, who is known for her black and white photography, is the first artist we are welcoming. 

About the artist: 
Maura Sullivan was born in 1971 in Hartford Connecticut. She currently lives in New York, New York. Her work is part of the permanent collection of the Museum of Fine Arts, Houston and is widely exhibited in both solo and group exhibitions in the United States, Argentina, The Netherlands, Poland, and Turkey.

Even Karavil himself did not know that the oversized mirror, which he got from the antique fair during his visit to England, would turn into a coffee table…
“C” coffee table unfolds the powerful contrast between the cylinder base made out of ash tree and its brass body. 
One of the exciting components of this coffee table for the design team is seeing the reflections of the objects or the treats that the mirror is going to carry. 
The design story, which is private for Karavil, has many mysteries. Its name “C” is coming from the belt on the body.

Instead of adding pure water for the dishes, using vegetable juice or beef broth makes a big difference on the taste. This technique, which is mainly used in industrial kitchens, also helps to consume goods without being wasted. When preparing the salads on Sanayi 313’s buffet, we use different kinds of vegetables. We collect the unused parts of those chopped vegetables in another cup and throughout the day we boil them and use the juice in the dishes. We also boil meats or fishes to add flavor to the dishes. 

I’d like to share a soup recipe. I used vegetable juice instead of pure water in this nettle soup recipe as well.

 

Sun choke nettle soup

Ingredients:

3 kg. sun choke
2 potatoes
2 carrots
2 onions
1 litre vegetable juice
100 gr. Butter
Salt, black pepper

We chop all the ingredients on the same size. After the butter is melt, we cook the vegetables for a little bit. Then adding the vegetable juice, we wait for boiling. 
After boiling, we make sure that all the ingredients are cooked well. Generally it takes 30 minutes. We blend the cooked vegetables. You can add more vegetable juice if it looks like it’s not enough. 
We add the washed and cleaned nettles inside the boiled water in a saucepan. We boil them for five minutes and then add them inside the soup with a strainer. We blend one more time. After adding salt and pepper, the soup is ready.
Before serving, I pour some milk and goat cheese on top.

Just before Enis Karavil’s birth year, artist & designer Güngor and a real master of upholstery Abdullah designed original ivories. 30 years later, the sofa created by Enis Karavil and his team is regenerated along with a wooden structure inspired by those original ivories. Outer side on the other hand, is covered by bronze toned leather with a feeling of suede.

Sometimes a book or a little photograph in a museum takes you to another world. These are precious moments. This time, for the first time it was a series that made me think differently, look at the world from another perspective. THE GET DOWN. 

The Get Down takes place in 1970’s New York, telling the story of the birth of hip-hop through the a group of young people’s lives. Will Smith’s son Justice Smith is on the lead role of Zeke, who is a smart, talented boy deeply in love with a girl. Mylene is determined to become a disco star and she wants to leave Bronx and reach Manhattan for her aim. Zeke is very good with words and making music. He also wants to rise. Zeke’s friends are artistic, too. One of them is a graffiti artist; another is a DJ. 
I just finished the third episode. There are clues that some of those youngsters will be famous. The effort they expend on this is told in such an authentic way that one gets impressed very easily. 
I suggest “The Get Down” for going back to those innocent times.

“Taking out from Tribeca, I would have my breakfast at Café Gitan on Mott Street. After that, since I am already in the area of Nolita, I’d check out the vintage shops and go around Soho. I would stay away from Broadway. Main roads are very crowded. I love to explore and even get lost in the side streets. I would walk to Bar Pitti in West Broadway to have lunch with my friends. Food is delicious and the ambiance is nice there. Then, I would go to Central Park by subway, walking through the park heading Guggenheim Museum. After visiting the museum, I would go back to Downtown by subway again and get ready for having dinner with my friends at Mr. Chow; one of New York’s classics. I would finally end the night having a drink at Blond.”

Her favorite spots…
“My favorite restaurant is Bar Pitti. For lunches, especially when the weather is good, this place is ideal. 
I always like to have something to eat or drink at Mercer Kitchen while going around Soho. 
The interior of Guggenheim Museum has always impressed me. 
I like to take a tour around Moma Museum, as well as the Museum’s shop.
Kirna Zebate and Bergdorf Goodman are my favorite shops in New York. 
I like to go around Nolita and East Village for vintage shops. Metropolis Vintage and Amarcord Vintage Fashion are my favorite vintage spots.
I enjoy the little exhibitions in Chelsea and discovering different artists. 
For me, Tomeo Sushi is the best sushi restaurant in town but one should not have any expectation of the atmosphere. It’s a simple and comfortable place, ideal for a Sunday night. 
Angelika Film Center is a place where I always enjoy going and watching independent movies. 
New York Library has a magnificent architecture. I can make research and daydream inside the books all day long. 
Unique Square Market is ideal for local goods and fresh flowers. When I was studying at Parson’s, I used to buy flowers from here and then by subway, head to my house in Soho.
Whitney Museum Meatpacking is a must-see.”

Sanayi 313 Architects have been working on projects all around the world. With their base project Sanayi 313 in Maslak, İstanbul, Enis Karavil has been a nominee for the international interior designer of the year 2016 by taking place in Andrew Martin Design Review Book. This year, Nicky Haslam (77 years old) won the price. Haslam has designed many famous people’s homes such as Mick Jagger, Bryan Ferry and Charles Saatchi. 
Hoping this a very good sign for the future, we are honored to be part of Andrew Martin Design Review.

Sanayi 313 Architects are telling us about their latest project “Beykoz House”.

The color dominance of the owner’s art collection over the base colors of the house was our main focus. We chose natural colors, making use of the calmness of white. We aimed to create a plain and dynamic base. Glass, wood and marble are the main materials used in the house. While the chimney portion has curved lines, sitting area having sharp and thud lines creates a nice contrast. 
The art collection consisting of Fausto Zonaro, Fikret Mualla, Ergin İnan, Nedim Günsür, Erol Akyavaş, Halil Altındere, Burhan Doğançay, Koray Eriş, Julian Opie and Yaşam Şaşmazer is complete with Paul Evans bronze cast coffee table, Dominique Imbert chimney and “Bubi” coffee table collection, which we designed for the owner’s special request.

Let’s make a statement on lively Christmas nights with Garcia Slippers or Mules. But first we need to learn the story behind Garcia. 

Each metal yarns are assembled to form an elaborate line of tassels.
The metal yarns artwork are executed in rigorous precision, starting with the craftsman drawing the lines on the base of the fabrics, followed by dying each metal yarns with a different color and finally weaving and sewing metal threads one by one. 
You can make a statement with a saddle luster of the metal yarns. They are unique and whimsical. Garcia Slippers reminds us the opulent 18th-century antiques, royal furniture, carpets, tapestries or curtains from a French Chateau.

Sanayi313 Architects were in London this month for design fairs and exhibitions.
We had a chance to meet with different designers and artists from all around the world. 
We started our inspirational week with PAD Art and Design Fair in London.
It was breathtaking. Also it was great to see some of our designers at PAD. We had a meeting with JamesPlumb and looked at Serge Mouille's vintage lightings. 
We visited Frieze and Frieze Masters as well. Frieze Masters was charming as every year with important artists such as Fontana, Magritte, Calder and Dali while Frieze was leading the contemporary art world with names like Anish Kapoor and Alex Katz. Artist Hans-Peter Feldman was our favorite.
It was a proud as a Turk seeing Taner Ceylan's "I love You" exhibition at Sotheby's S2 Gallery. Everyone should see his extremely realistic way of details.
We celebrated 10 years of collectible design at Carpenters Workshop Gallery Mayfair, London. It was exciting to see how design is becoming more important with years. We completed the week by attending the private viewing of Vincenzo De Cotis limited edition furniture at Carpenters Workshop Gallery.

Seasonal tastes make our brunches special. Butter comes from Rize, eggs come from Bolu Karaağaç and the cheese come from Alaçatı. These days, brunch menu’s specialties are scrambled eggs with avocado, leek and tomatoes & basil. 
On Saturdays, we sometimes have surprise live music performances as well…

Tripedal display designed by Enis Karavil and his team Sanayi313 Architects brings together old cast-iron legs with a Walnut counter top retail display case, set on a beveled wood plinth. The Tripedal (three-legged crow) is a creature found in various mythologies. Also, it is believed by East Asian cultures to inhabit and represent the Sun. Karavil combines this mythological figure with his modern idea and displays precious items from "Sanayi313 Picks" with a natural light that reminds of Sun.

Since Sanayi 313 Shoes & Bags Collection is executed by hand using traditional skills in artisanal workshops all around the world, it is almost impossible to repeat the same pattern or texture. It takes 36-60 hours to weave each thread and complete one establishment on slippers.
This seasons favorites CIGNO and CASCATA are very special… While you are dancing in your CASCATA heels, you’ll be the center of attention. If you carry that CIGNO flap bag, oh, everyone will be chasing you!

Scrabble table (vintage) remained on my mind the most. 
After I left Sanayi 313, I went to my office in a happy mood. 
Before going to sleep, I leaf through the magazines near my bed.

As the fishing ban is over, fish counters look very colorful these days. One of the fishes that excite me the most in this season is ‘bonito’. Grown in the Black Sea and the Sea of Marmara, the season for bonito begins in September and continues until February. The most delicious time for this fish is the months of November and December. According to its size, the name for the fish varies as well. 
In the beginning, the small size (20-30 cm) of bonito is called ‘baby bonito’. Since they are very small, baby bonitos are not fatty. As they grow up, they get fatty and delicious. I don’t recommend grilling the baby bonito. It is really very dry and must be served with sauce. 
When bonito gets bigger to 30-40 cm, it gets the original name. It’s the time when bonito is really delicious! Fatty bonito is both my and Sanayi 313’s favorite. I prefer to serve it grilled. The key part for cooking is being very careful while grilling so the fish does not become dry. 
Bonitos that are 50-60 cm are called ‘tunny’. This is the most fatty time for the fish. Generally it is consumed as salted fish. I developed the idea of salted fish for Sanayi 313’s menu. I made pickles out of the avocados I bought from Alanya Bazaar. I am really excited for the pickles. I am thinking of serving them along with salted fish in private events. I love to eat fish along with sour and salty things. 
Bonito, which has just taken its place in Sanayi 313’s menu, is served with homemade mayonnaise since it is not fatty yet. I’d like to share with you the recipe for the mayonnaise. You can create your own difference with it, not only for fish but also for sandwiches.

 
Mayonnaise with poppy seed and turmeric

Ingredients: 

2 eggs’ yolk
500-ml. olive oil
½ lemon juice
1-teaspoon turmeric
1-tablespoon poppy seed
4 pickled cucumbers (minced as small cubes)
¼ dill (minced)
1 package of garlic chive
2 cloves of garlic (grated)

Adding the olive oil to eggs’ yolk slowly, we whisk them in a mixer. When the mix is thickened enough, we add the lemon juice. The lemon juice is not only for the sour taste. Since the eggs are uncooked, it is a precaution for bacteria. 
Then, we add all the remaining ingredients into the mayonnaise and serve it along our bonito.
This is the new favorite of the menu!  I need to eat a juicy bonito after writing this recipe…

The neoclassical chair is part of Hillsideout’s mosaicked furniture collection that finds its inspiration in the element 'water'.
This restored chair of walnut and black ebony wood originated in Italy during the beginning of the 20th century. The original sitting has been replaced with a sitting made of transparent plexy glass and colored mosaics, which are immersed in resin. The antique marquetry and carved ornamental motifs of the chair are particularly beautiful and unify different classical styles like the Baroque, the Rococo and the Gothic in order to become a Neoclassical style which is meant to reflect grace and power. This piece is, in effect, classical architecture in miniature. 
The transparency permits a new way of using antique chairs, which makes them contemporary and even more unique.

I came to Sanayi 313 today because I couldn’t come here throughout the summer.
I had wild purslane salad today! Yummy!! Strawberry pesto!
I couldn’t resist the peach sorbet among the desserts. 
The first thing that caught my eye while going around the store, was Enis Karavil’s displays, they are gorgeous. Also, Jupe (Jupe by Jackie) silk bowties. 
Hillsideout chair (as if defining what post-modern is) remained on my mind the most. 
After I leave Sanayi 313, I am going to my reading-writing home to write my second book with my Sanayi 313 notebook. 
Before going to sleep, I drink water and check my e-mails. 
MASHED POTATOES WITH RED BEET

Müge is sharing with us her special recipe of mashed potatoes with beet. 

Beet is one of those vegetables that taste good in all forms. Pickled beets, beet soup, beet in olive oil, hummus with beet…
These days Sanayi 313’s buffet is very colorful. There are reds, greens, yellows and many others.
I would like to share with you the recipe of the most staring one, which is also my favorite. Bringing together the two ingredients I love most for this dish was very elating. If you can find thyme in the markets, you can create a really tasteful mashed potato with red beet. You can serve it either hot or cold. I put it as a cold salad on the buffet. Be certain you’ll get very positive reactions, if you serve the same puree hot along with a good lamb’s shank. You can also present it as a starter near Burrata made out of water buffalo milk. 

Ingredients

1 kg. potatoes
2 kg. beet
2 oranges
150-200 gr. brynza cheese
2 gloves of garlic
5-6 ml. wine vinegar
3 spoons of maple syrup
15-ml. olive oil
Salt
Pepper

After washing and peeling the beets, we cut them in four and put them on a baking tray. Adding olive oil, garlic, salt and pepper, we cook them in 200-degree oven for 40-45 minutes. 
We boil the peeled potatoes in a cooking pot. Bringing the cooked beets and boiled potatoes together, we blend them. After grating the garlics, we add them into the blend, which is now in the form of puree. 
We add the olive oil, maple syrup and the wine vinegar into the puree with the help of a whisk. 
I put some Brynza and orange peel with my hand on top of the puree before serving it.

The sculpture “Unusual Moments’ Monument” projected by Seçkin Pirim especially for Sanayi 313 is much more than a monument. It actually roots in neighborhood, friendship, shared ideas, inspiring conversations. 
Those were the days when we started with the idea of ‘finding the right path in every society once you follow the artists.’ Sanayi 313’s doors were not open yet. We cannot forget the day Seçkin Pirim arrived to Sanayi 313 with his motorcycle right after receiving our invitation. He had tea, tasted our spinach quiche, looked around the store and shared with us his thoughts. It was very important to hear an artist’s opinions. As time went by, we went to visit his atelier; he became one of our regulars. 
New ideas were created after our conversations every time. We started with the color red. It was a contrast to Sanayi 313’s black & white. We decided on plates, reflecting the Oto Sanayi area, which we love and share. Unity of the pieces was important. Our opinions were in concert anyhow…
Red plates were put on top of each other on a long night spent in Sanayi 313. We did not forget to videotape the whole process through the lenses of Murathan Özbek and Veysel Değertekin. 

“Unusual Moments’ Monument” is standing grandiosely at where it belongs, symbolizing our friendship. On behalf of what Seçkin Pirim and Sanayi 313 shared and still sharing…

Going back to her childhood days in Büyükada, Müge shares with us her special recipe of lemonade with basil.

Lemonade has a very special place in my life. Lemonade evokes my childhood memories; the famous Lale Buffet in Büyükada, the toasts we used to eat in the middle of the night, sugar pastry my father used to buy in the mornings and my mother giving me lemonade as a vitamin when I was sick…
Though making lemonade seems easy, not all of them have the same taste or the look. Some of the lemonades are too sugary or sour, whereas some come up with a bitter taste because of keeping the dregs inside too much. 
I like my lemonade sweet. My favorites are those made from real lemon and lemon juice, which are found in old patisseries mostly. 
My father is a lemonade lover just like me, so I trust his taste a lot. He always talks about those lemonades he used to drink in Heybeliada during his childhood. He says he couldn’t find anyone who can achieve the same taste. Fortunately, he loves the lemonades in Sanayi 313. 
We thought we could try something different for our lemonades and made diversifications. We make lemonades with strawberries, basil, purple basil and cucumbers. My favorite is the one with purple basil.

Ingredients:

•    6 lemons’ juice (with the dregs)
•    6 lemons’ juice (without the dregs)
•    3 limes’ juice (with the dregs)
•    3 limes’ juice (without the dregs)
•    10 glasses of cold water
•    450 gr. brown sugar
•    Half bundle of purple basil
•    Ice – optional

After blending all the ingredients in a blender, we keep the mix in the fridge for one night. By this way, all the tastes are combined. Then, we strain the concentrated mix and serve by adding ice and water. 
If you wish to add a touch to your lemonade glass, put a purple basil leaf on the side of your glass and enjoy!

Enis is telling us about the display “Pentagon” specially designed for Sanayi 313.
“Pentagon”, which is designed by Sanayi 313 Architects, takes its names from its shape. Since the display makes the objects it exposes untouchable, it is right to state that we were inspired by “Pentagon, Department of Defense” located in the USA. 
The woodgrain, the drabbet used in the display’s inner cover and bronze legs completed by hand workmanship create a visible contrast. Sometimes our visitors say that the display itself leaves the valuable objects exposed inside behind.

The good food and the ambiance of the place are what remains on my mind the most. 
After I leave Sanayi 313, I am going back to my atelier to work.

Interior Designer Gülay Özgün is telling us about the Bulgarian Monument Buzluca she visited. 

I came across with Buzluca Monument through the “must see” lists on Internet. I saw it on abandoned Soviet Buildings list and saved it as a place to visit. When I saw the monument on a magazine I was reading last week in Sanayi 313, I went to see the building last weekend. 
The building, which was constructed by Bulgarian Communist Party in 1981 at the top of Balkan Mountains, has become a symbol in the world as the regime changed and it got doomed in 1989. There are breathtaking mosaics in the building designed by Georgi Stoilov in seven years. Even though some of the mosaics are wiped away, there are 500-meter squares of mosaic just in the meeting area of the building. 
The entrance of the building is closed since it can be dangerous because of disrepair. But there is a small whole so people can look inside. I wanted to go inside after coming all that way. Though the building is vandalized, it is still very impressive. “Forget Your Past” writing in the entrance of the building in red has turned into “Don’t Forget Your Past”. I don’t know if you’d prefer to forget or remember your past but I would definitely recommend visiting Buzluca Monument.
