As the weather gets warmer, our eating habits begin to vary. Especially in hot weather, we prefer to eat light food rather than oily and heavier dishes. 
One of my favourite dish for summer is green zucchini with almonds and yogurt, which is highly preferred in Sanayi 313 Bebek and Oto Sanayi buffet. 
It is easy to find green zucchini this season. If you go to district bazaars, you won’t have any problems finding them. 
This time, I will be sharing a very practical and matching recipe. 

Ingredients:

1 kg. green zucchini
300 gr. strained yogurt
100 gr. almond powder
Salt-pepper
Olive oil

We cut the zucchinis in the middle and take of the inner part with a spoon. Then we add a little amount of olive oil, salt and pepper and then cook them for 15 minutes in a preheated to 200 degrees’ oven. 
After taking the zucchinis away to leave them for cooling, we begin to prepare the mixture. We mix the yogurt and almond powder in a blender. It is important that the mixture is not fluid. Because if it is fluid, it can flow from the zucchinis. If needed, you can add more almonds. You can add salt and pepper in the amount you desire. 
We put the mixture inside the cooled zucchinis. It is important that the zucchinis are cold because the yogurt might ferment otherwise.  
I garnish the zucchinis with roasted almonds and spices. Fresh herbs can be another way to garnish them.
